Proposal will be evaluated based on the criteria found in Section 4.0.
Concessionaire should structure proposal in the same numerical order that the mandatory
conditions and review criteria are listed and must include the following:
1. Number of years experience outdoor vending in Fort Collins or another city.
If experience is not in the City of Fort Collins, include proof of vending elsewhere and list
a contact name or phone number to verify. An example of documentation would be
copies of sales tax returns for individual years in another city.

public or private property.

3. Quality and Suitability of Product:
Include description and/or pictures of the products to be sold with estimated prices.
Quality comparisons, statements, pictures and/or brochures are requested to review the
quality and suitability of the products.
4. Quality/Appearance of Equipment:
Concessionaires are required to have a mobile cart. The cart may not exceed the size of
four (4) foot wide, ten (10) foot long and eight (8) foot high, excluding roof overhangs
and wheels.
Degree to which City specifications and requirements are met. Include pictures,
schematics, or other data that will support and show the quality/appearance of
equipment, including mobile food truck or pushcart .
The City reserves the right to inspect all equipment to make a determination.
5. Payments to the City:
The minimum that will be paid to the City, regardless of numbers of months operated, is the
$120 annual fee. In addition, food and beverage concessionaires shall pay a clean-up fee
of $20 per month for their assigned vending site.

I am a lifer in the hospitality/ food service industry. It is all 1 know and where my
entire life's work experience lies, so why not do it for myself. I am more than ready
to take the risk of going into large debt and owning my own food service oriented
business. I know that with my hard work and around the clock dedication 1 will be
successful, and have no problem paying my bills and getting out of debt as quickly as
possible.
In my 19 years in the restaurant industry I have taken the time to study and observe
how owners run their businesses.
What it is that good owners do in order to achieve success and what do bad owners
do in order to achieve failure.
A restaurant is only as good as it's weakest leader and it is up to ownership to
ensure that all of their leadership is as strong as possible.
A lot of people with money open restaurants, and attempt to be their own general
manager but think that their only job is to eat and drink for free and schmooze with
guests, I don't care how much money a person has to invest, without hands on,
hardworking ownership the restaurant is guaranteed to fail.
I know exactly what kind of hard work, long hours and around the clock dedication
it takes to be successful as an owner in this industry, and those are things that I am
ready to take on in my life.
A restaurant owner needs to know every in and out of their restaurant, have
complete knowledge of every single product served, be able to answer every
single question presented about their business, work every single position in the
restaurant, front and back, work harder than any other staff member and be on
sight more than anyone else. An owner that buys into and follows through with
this theory will have certain success. An owner that does not buy into this will have
definite failure.
I am 36, single and live in Longmont, Colorado. I was born and raised in
Northbrook, Illinois, a northwest suburb of Chicago, and have always had a love and
passion for Chicago style food
My highest level of education is an associate's degree in restaurant/ resort
management from Front Range Community College in Ft. Collins, Colorado.
I have been working in the restaurant industry for the last 19 years, since I was 17
years old.
I first started as a dishwasher and prep cook and eventually working every position
in the kitchen, I worked my way up to holding an assistant kitchen manager position
for a short time. After spending about 6 years being a cook and kitchen manager I
felt it was time to learn the front of house. I moved down to St. John in the U.S Virgin
Islands, where the volume is extremely high in restaurants and bars. 1 became
a very successful waiter, bartender, and shift supervisor. I had bartending shifts
where 1 would sell upwards of $3,000 of food and drink on my own. After 6 years on
St. John I moved back to Colorado where I spent the last 2.5 years managing a very
large 20,000 sq ft restaurant with a capacity of 500-600 depending on the time of
year and annual sales upwards of $5 Million dollars.
I know all the ups and downs of this business extremely well, and 1 definitely have
what it takes to run a successful restaurant.
I've spent years bringing in lots of money and serving thousands of guests for other
people, I know that I am ready and it is time for me to do it for myself?
I truly feel that there is nothing left for me to do at this stage of my life but work and
sleep, but my motivation for that lies in being able to do it for myself and know one
else.
I have nothing tying me down (i.e. wife, children, pets). 1 would literally spend every
waking hour making this business successful, taking just enough time out of each
day to sleep so that I can stay fresh of course.

Vienna Beef manufactures boat skinless and natural
casing sausages. Skinless sausages are cooked In an
artificial using which Is removed during the
production process. Natural casing sausages are
cooked In natural animal casings which provide the
signature -snap- when you bite them. Most of our
natural using sausages Milan sheep casings. Our
larger -sized natural using foodservice sausages (5
to -a -lb. and larger) utilize pork casings. Note that all
of our retaif packaged products In grocery stores and
warehouse dubs are skinless and contain no casings.
