Concessionaire should structure proposal in the same numerical order that the mandatory conditions and review criteria are listed and must include the following: 1. Number of years experience outdoor vending in Fort Collins or another city. If experience is not in the City of Fort Collins, include proof of vending elsewhere and list a contact name or phone number to verify. An example of documentation would be copies of sales tax returns for individual years in another city. Number of years: 3( 01 dyi SOY- 2. Quality/Appearance of Equipment: Concessionaires are required to have a mobile cart. The cart may not exceed the size of four (4) foot wide, ten (10) foot long and eight (8) foot high, excluding roof overhangs and wheels. Degree to which City specifications and requirements are met. Include pictures, schematics, or other data that will support and show the quality/appearance of equipment, including cart. The City reserves the right to inspect all equipment to make a determination. 5. Payments to the City: The minimum that will be paid to the City, regardless of numbers of months operated, is the $120 annual fee. In addition, food and beverage concessionaires shall pay between approximately $85 and $240 per month for power washing of their assigned vending site. Concessionaires at sites which are split between day and night operations with another food and beverage concessionaire shall pay a portion of the power washing fee.. Stephen Boulter, who has three years experience running multiple food carts in Denver, has agreed to act as an advisor for the business. Quality and Suitability of Product We have the experience and capability to deliver many different food cart items to downtown Fort Collins. Our business plans include food carts for French fries, cookies, and gyoza (pot stickers). We are committed to using only the highest quality ingredients from local sources such as Diamond D Dairy, Colorado's Best Beef, and Miller Farms. We are confident that our unique recipes will make mouths water and all of these products can be successfully provided through a vending cart. The attached menus are the options we can provide to the downtown area, if granted a location. We would ask the City to suggest which of these options is most suitable. We have 6 years experience in the food service industry. This experience includes founding a catering business in New Mexico (The Decadent Table, http://www.decadenttable.com/), obtaining a French pastry chef certification, and experience at the national food service provider Aramark. Our goal for operating a food cart downtown is to provide products that will compliment other downtown restaurants and food cart vendors in a safe, clean, and sustainable manner. We hope to increase traffic and contribute to the vitality of downtown Fort Collins. Please see the attached menus. In addition to the provided menus, we are considering offering barbeque brisket and pulled pork using a cart specifically designed for barbeque. Please let us know if this type of food would be of interest to the City. 4. Quality/Appearance of Equipment We are prepared to acquire the mobile cart necessary to provide the most suitable food in the downtown area. All of the following carts meet the size specifications set by the City. All of the equipment is high quality and two tarps will be laid under the cart to keep the working and serving areas clean. For baking cookies, the following cart or something very similar will be used. This particular cart is custom made, using a Peerless Commercial 4 Rack, 1/2 sheet size LP gas oven. It has both hot and cold water units and all components in the cart are NSF. The cart has only been used part time for 4 months and is in excellent condition. Pictures below: t For French fries, the following cart or something similar will be used. The cart is custom made with a 2 foot square grill, 5 steam pans, 2 fryers, and 2 sinks with hot and cold water. For pot stickers, we will use the following cart or something similar. This cart is 75" x 44" x 34". It is a completely self-contained cart with a 24" flat commercial griddle, ice bin, 3 condiment pans, 2 full-size steam tables with pans and lids, a 4 compartment sink, 10 gallon water tank, 17 gallon waste water holding tank, and a storage area. z . ap _ F L S.
