Mackenzie's is also a wonderful host for your golf outing with a variety of menu items for parties of 10 or more. SouthRidge Golf Course was designed by Frank Hummel in 1982. His par 71, 6300 yard creation has been host to many golf outings over its short existence. Carved out between Fort Collins newest community, SouthRidge will give you a tight fairway with lots of OB and plenty of elevation changes. The opening hole is a friendly 331 yard par 4 with a small creek running through the middle of the fairway about 150 yards off the tee. A fairway wood or long iron are common choices for the tee shots. Amid to short iron is all that is required for the second shot to an average size green that is o en in front but guarded on the right by a sand bunker. #2. Number 2 is a 343 yard par 4 dog °~ leg left. Although the fairway is generous there are 2 fairway bunkers one left and one right at the midway point of the fairway. The second shot requires short to mid iron to the green. #3. This 165 yard par 3 is pretty straight forward with one small bunker protecting the front right of the green. Beware of going long as there is a large hill that falls off the back of the green with OB haunting a couple yards back. Tournaments *4• This 368 yard par 4 is lined with trees at the landing area. A straight drive is a must. If you happen to find the fairway on this par 4 you will be left will a mid to short iron to the RequestForm green. The green is protected by a small pot bunker on the front left half. Course... #5• If you can find the fairway on this short 489 yard par 5 a birdie is a given. With water lurking on the left side of the landing area and 2 bunkers to the right finding that illusive Course Detail fairway can be tough. After the tee shot you are left with a decision to lay up or bomb away. With no trouble for the rest of the hole. I say swing away. Map #6. This short par 4 of 317 yards requires only a fairway wood or a driving iron from the tee. Contact Us The short iron second shot needs to carry past the front of the sloping green or the ball will back off. V. This 420 yard par 4 is like hitting a golf ball between a football upright. With 2 large trees just 50 yards off of the tee box your drive better be coming off that driver straight. The second shot requires a long to mid iron and carries a short bunker to the left of the green. #8. Number 8 is a 205 yard slightly up hill par 3 to a very severe green. A deep greenside bunker is front right. Steep grass slopes on the left leaving you only one choice, to hit it straight! #9. This 343 yard hole is a short par 4 with water waiting for you at the end of the fairway. The landing area is fairly wide, leaving a short iron which you must only carry a small bunker protecting the front of the green. Measuring 378 yards, number 10 presents a fairly severe dogleg left lined by a grove of trees down the left-hand side. Be sure to take enough club as there is a large lake that you will need to carry of the tee. The approach shot is semi -blind due to the large hill you will climb to reach this par 4. #11. This 495 yard par 5 leaves you with 2 options. For you long hitters it is a 250 carry to get over the creek running through the middle of the fairway. Succeed in this and you will be left with a long to mid iron into this short par 5. For you shorter hitters just take your 200 club and smack it down the middle there is no trouble short of that ditch. Lay up to 100 yard stack and take dead aim on your next shot with only a small bunker to carry just short of the green. Birdies come in groups on this hole. #12. Take advantage of this par 3 of 125 yards. It's the shortest hole on the golf course..... straight forward, no tricks. Pick your club and fire at the stick #13. This long par 4 is demanding from start to finish. An ideal tee shot leaves 175 yards taking the tree and rough left and right out of play. From there, an accurate shot with a mid to long iron to a treacherous green is a must for any real chance, at birdie. MEN,' w . '. you will be in b the #14. A risk reward tee shot, players often pick their poison on this relatively short par 5. Get it near the ravine and test your long irons or woods to reach this hole in 2. A slight dog leg awaits you non gambling golfers with a long iron off the tee you will be left with a mid iron to lay up short of the ravine what runs along the right side of this hole. Beware of the mighty ravine and you will do fine on this fun par 5. #16. Swing hard and carry that ravine that we fell in love with the last hole and irdie land on this hole. A small bunker will try to scoop up any lost shots to right into this short 345 par 4. Take dead aim and get your 3. #16. This 210 yard hole introduces you to you know who again. With the ravine lurking 160 off the tee a 200 carry to the green is a must. Bring your straightest club to the tee with the bunker and severe hill lurking to the right of the green that is sure to eat at least one ball out of four. Good luck, 3 is a good score! #17. This 380 yard par 4 has double trouble in the fairway with 2 large bunkers just waiting to suck that white ball in. The two bunkers left and right sides of the fairway are approximately 230 yards off the tee. Keep it between them or just short and you will be left with a long to mid iron to this green that is protected with a bunker short left of the green. Take your 4 and be happy. #18. Number 18 is a great finishing hole that measures 385 yards with a severe dog leg to the right. A tee shot of 240 will put you just short of the water and at the beginging of the dog leg. Our qualifications to operate the concession's service at Southridge Golf Club rely upon over thirty-eight years of combined restaurant experience. In 1994 The Sandtrap Inc was restructured; Derek Cordova went into partnership with Dan Bruntz who took over as a corporate owner and general manager of the newly named Mackenzie's Pub and Grill. The gross sales of Sand Trap Inc. prior to 1994 were $122,000. Mackenzie's sales for 1997 year to date are over $211,000; this is the first time in the company's eleven year history that it will show a significant profit. This accomplishment has been done in just three years. It's important to note that according to PGA data, 95% of all food and beverage operations at golf course sites are not profitable and must be subsidized in some capacity. This makes Mackenzie's even more "remarkable." Dan's and Derek's experience and vision have created win -win situation for the city of Fort Collins. In 1994 Dan Bruntz, an assistant golf professional at SouthRidge Golf Club, took over as general manager and replaced corporate partner Kristi Olsen. Dan was brought in to clean up the operation and put the restaurant on track with the management philosophy of SouthRidge Golf Club. Dan has managed all restaurant day-to-day operations. He is in charge of all hiring, scheduling, training, supervision of over twenty-five employees, inventory, payroll, ordering, advertising, implementation of a new menu concept and logo, operations manual, policies procedures manual, and catering over seventy tournaments annually. Dan maintains the 3.2 beer license and tavern license at SouthRidge. In the fall of 1995, he was a consultant to SportsCaster Bar and Grill where he was in charge of over thirty employees in a management capacity. SportsCaster generates over 1.3 million dollars annually. Prior to working at SouthRidge and being elected to PGA membership in the spring of 1996, Dan worked for Cable's End restaurant in Greeley and Fort Collins for fourteen years. He started as a bus boy and worked his way up to become the general manager of the restaurant. During Dan's tenure at Cable's End, the restaurant grossed 1.6 million dollars annually. His time spent at Cable's End, SportsCaster, and Mackenzie's Pub and Grill has given him extensive knowledge and experience. Dan's dedication and commitment to the City of Fort Collins will continue as he operates the concessions at SouthRidge through the year 2001. Derek started his food and beverage experience in 1976 at the Collindale Snack Bar, and in 1980 Derek was awarded the bid as the contractual concessionaire at Collindale. He was responsible for general management of the snack bar operations and his duties included interviewing, hiring, training, menu creation, scheduling, day-to-day operations, sales promotions, and coordination of all tournaments and outside events. During his tenure, Derek grossed over a million dollars in sales and generated over $160,000 in rent revenue for the city of Fort Collins. From 1985 to 1987 he operated Thunderbird Lanes Snack Bar in Boulder, Colorado, and gained valuable experience in managing a full service liquor license. In 1987 Derek signed a concession's agreement with the Bucain Corporation and had an active role as owner and general manager of operations. In 1991 Derek's career path changed and he dedicated the majority of his time as a golf professional on the staff of SouthRidge in an effort to become a member of PGA of America. His role in Sandtrap changed to restaurant consultant. Currently Derek is a corporate partner of Mackenzie's Pub and Grill and the Head Golf Professional of SouthRidge Golf Club. The management team has hired several key individuals to assist in operations. We have hired and trained a bar manager, kitchen manager, outdoor food and beverage coordinator, and a qualified kitchen staff with talents in all areas of food preparation. We introduced an extensive training operations manual for all of our employees and require total commitment to our customer service philosophy. All key employees are cross -trained in every area of the operation and can fill in when additional staffing is required. As operating partner, Dan Bruntz will continue to operate Mackenzie's Pub and Grill concessions in the same professional manner that has proven to be successful for the past three years. Dan, as the leader of Mackenzie's, has assembled and oversees an excellent support team of key individuals. Mackenzie's current management team includes a qualified bar manager and kitchen manager. With regards to Dan's personal involvement, he will continue to work an average of seventy hours a week during the peak season. Dan recognizes the commitment the restaurant requires, and his visibility must be at a high level. As his past has shown Dan's dedication and willingness to work long hours has never been an issue. Dan has significantly increased business (over $95,000) and developed a substantial relationship with a regular and growing clientele. Derek and Dan are an excellent team, and their combined expertise and problem solving skills have been a valuable asset at SouthRidge Golf Club and Mackenzie's Pub and Grill. The team of Bruntz and Cordova has become proficient in the following areas: • Communications with golf course professional staff. ■ Communications with golf course superintendent. ■ Day to day operations management. ■ Purchasing and inventory control. ■ Budget and sales forecasting. • Advertising and Promotions. ■ Excellent staff training and professional development. ■ Staff motivation and management leadership. ■ Full service catering. • Tournament food and beverage coordination. ■ Superior Health Department evaluations. We rely heavily on a well -trained professional staff as they are responsible for ensuring that the public has the best possible experience at our establishment. To insure that this happens, we have implemented a training program for all staff members and created an operations policy manual that includes alcohol serving guidelines, opening and closing procedures, and answers general operations questions. With the assistance of key employees, weekly meetings, training, and customer feedback our service is impeccable . Mackenzie's Pub and Grill has always exceeded the minimum service requirements of the contract and will continue to in its efforts to meet and exceed the status quo. Our 1997 annual review by the City Golf Manager, Jerry P. Brown graded our efforts and accomplishments with an A rating. Our management team of Dan Bruntz and Derek Cordova has continuously improved the restaurant operation top to bottom in every area of management. All full time employees can participate in health and dental insurance and we offer our kitchen and bar manager paid healthcare. Other benefits include professional development expense reimbursement, half price meals, free soft drinks, and discounted spirits. He has worked many long hours during the peak season and has spent countless hours behind the scenes to insure the success of Mackenzie's Pub and Grill. The management team of Bruntz and Cordova has demonstrated superior communication skills and the smallest of details have been addressed. The management team in place has shown great vision and their proven leadership is a great asset to the city of Fort Collins. (The Bunker House has been important to the golf operation because it promotes a continuous pace of play) Mackenzie's Pub and Grill has proven its commitment to continued excellence in all areas of management and we are proud of the way we have represented the city of Fort Collins. Mackenzie's Pub and Grill is 100% debt free, has current assets valued at $40,000 and $28,000 in cash reserves to finance the operation in the future. Additionally, we (Dan Bruntz and Derek Cordova) have a $40,000 open line of credit with American Bank in Loveland specifically dedicated to this operation. The inventory requirements to operate Mackenzie's are significant and the current inventory is estimated at $6,000. Mackenzie's has also established credit lines with all major food and beverage vendors and its credit history is flawless. If we are awarded the contract for this RFP the current liquor license can be transferred to meet the terms of the future contract without interruption of daily operations. We have appeared before the liquor authority and if granted legal possession of the premises, liquor licensing will be merely a formality. This is important to note because we have personally completed the petition process for liquor license renewal. In 1992, the city of Fort Collins through a RFP process selected The Sandtrap Inc. d.b.a. Mackenzie's Pub and Grill to continue to operate the restaurant facility. Because of the uniqueness of a very complicated liquor license, Sandtrap Inc. was offered two consecutive one-year contract extensions. Dan and Derek have always operated the facility with The City of Fort Collins best interest at the forefront and cooperated in every way to make the 1998 RFP possible. In addition to the financial stability of Mackenzie's Pub and Grill the restaurant has been remodeled at our expense. This was done to elevate the facility to be a model operation. The Sandtrap Inc. d.b.a. Mackenzie's Pub and Grill has established a very solid foundation and is poised to continue its relationship with SouthRidge Golf Club. We have operated this facility with integrity, honesty, and commitment to excellence. We are respected in the business community and are confident in our abilities to build on the foundation we have established. SouthRidge Golf Club is a unique position regarding food and beverage services. The restaurant is operated by PGA golf professionals Dan Bruntz and Derek Cordova. We truly understand the importance of having a superior food and beverage facility and how it can have a significant impact on the customer's golf experience. We have been innovative in our management approach and rely on solid teamwork throughout our operations of the restaurant and pro shop organization. We have been able to coordinate tournaments with expert attention to detail and pride ourselves in offering unmatched service. Additionally, we have brought outdoor concessions to a higher level by offering a full -service beverage cart and an on -course facility located at the turn known as the "Bunker House." The pro -shop, maintenance and restaurant staffs have been a successful team, and we recognize the importance of our roles as they relate to the total operation. The management team of the Mackenzie's Pub and Grill has operated the restaurant using very strict guidelines regarding menu offerings, product quality, product presentation, and pricing structure. We have developed a sound foundation at Mackenzie's, and our customers genuinely support our operation as evidenced by the sales growth of our restaurant. We have evaluated many food and beverage operations throughout the country, and believe in the concept that we have developed at our facility. We have used this experience and feedback to continually match our customer's needs and wants. The restaurant serves over five thousand tournament rounds annually and provides food and beverage support for nineteen outside leagues. Mackenzie's has had a vital role in securing future tournaments and leagues at SouthRidge. Submitted in this proposal is the 1997 menu used at our facility. This menu was first introduced in 1994, and has been continually modified to better serve our guests and the golfing public. We offer a wide variety of menu selections that cater to the traditional golfer and the health -conscious patron. The menu is diverse and includes appetizers such as: jalapeno poppers, buffalo wings, and nachos. We also offer a wide variety of salads, hot and cold sandwiches, and Mackenzie's famous chicken or beef burrito topped with our own homemade green chili. Another popular selection is Mackenzie's ten -ounce New York steak sandwich with our special french fries. We also offer a wide variety of flame -broiled burgers. Mackenzie's offers daily specials along with a well -designed breakfast menu throughout the peak season. We will continue to offer the finest domestic and micro beers on tap and offer a wide selection of bottled beer, premium wells, wine, and top shelf spirits. The concept of Mackenzie's Pub and Grill was designed and created around a sportsbar atmosphere in a golf motif to provide our customers a cordial and relaxing experience. We currently have four 27" televisions and have recently added a pool table. These additions have encouraged a comradery among our patrons, which makes everyone feel welcome. The mission statement of the Mackenzie's management team is to provide the golfers with the best restaurant golfing experience that can be found in our city. Our primary goal is to exceed their expectations in terms of pleasure and enjoyment and we strive to consistently provide our customers superior service. All other times at City Park Nine and Collindale shall be considered NON -PRIME TIME hours. JPBrown: 11/96 CITY OF FORT COLLINS CULTURAL, LIBRARY, AND RECREATIONAL SERVICES SUBJECT: Policy Statement on Golf Staff Usages at City Golf Courses PURPOSE: Establish and Revise Procedure and Guidelines for Eligible Golf Division Staff for Usage of City Golf Courses and Golf Cars EFFECTIVE DATE: July 1, 1995 STATEMENT OF POLICY: Cultural, Library, and Recreational Services staff who work within the Golf Division are eligible for free or low-cost usage of City golf courses and City golf cars as follows: All Golf employees, whether paid or unpaid volunteers, who currently work within the Ciry Golf Division, or are between work seasons, are covered by this policy. This includes both permanent and hourly/seasonal City of Fort Collins Golf employees, employees who are employed by the Golf Professionals, and employees employed by the Snack Bar Concessionaires. These employees may play rounds of golf and may use City golf cars, and either not pay fees, or pay discounted fees, as appropriate. 2. Golf Play Usage shall be as follows: A Employees who normally work 30 hours or more per week have no restriction on the number of free rounds of golf played per week at the specific golf course where they work. Employees who normally work 29 hours or less per week are limited to up to three (3) free rounds of golf played per week or up to 15 free rounds of golf per calendar month at the specific golf course where they work, per specific site policies, or as approved by the Manager of the Golf Division on a per site basis. All employees, however, will pay normal tournament fees to participate in tournaments. B. Employees may play one (1) free round of golf per month at both of the other two City golf courses where they do not work. However, if practicing for a City sponsored or co -sponsored tournament to be played at the other golf course(s), employees may play free practice rounds of golf at the other course(s) within their regular number of rounds allowed per week one week prior to the tournament. The employee's supervisor is responsible for notifying the host Golf Professional. C. Employees are allowed to make advance tee time reservations or be a part of someone else's reservation utilizing the same tee time reservation procedure approved for all golfers. Employees will sign the Daily Registration form as "staff," noting 9 or 18 holes, and may also be asked to sign a log book provided by the Golf Professional for management purposes. Golf car usage shall be as follows: A. Full Time/Permanent/Supervisory employees, as defined by the Manager of the Golf Division, may use golf cars at no charge at the course where they work, if a reasonable number of golf cars are available as per the judgement of the Golf Professional. For tournaments, leagues, or at the other two courses where they do not work, golf cars may be rented by the employee at the 50 percent 9 or 18 hole discount rates, if a reasonable number of golf cars are available, per the judgement of the Golf Professional. Non -employees riding with an employee may ride at no charge, but will pay their full 50 percent share or the other one-half balance of the appropriate golf car rental rate when the employee is charged. B. Full Time/Seasonal employees, as defined by the Manager of the Golf Division, who normally work 30 hours or more per week, may use golf cars at no charge at the course where they work on weekdays only, if a reasonable number of golf cars are available as per the judgement of the Golf Professional. For weekends, holidays, tournaments, leagues, or at the other two courses where they do not work, golf cars may be rented by the employee at the 50 percent 9 or 18 hole discount rates, if a reasonable number of golf cars are available, per the judgement of the Golf Professional. Non -employees riding with an employee will pay their full 50 percent share or the other one-half balance of the appropriate golf car rental rate at all times. C. Part Time/Seasonal employees, as defined by the Manager of the Golf Division, who normally work 29 hours or less per week, may rent golf cars at the 50 percent 9 or 18 hole discount rates at all times, if there are a reasonable number of golf cars available as per the judgement of the Golf Professional. Non -employees riding with an employee will pay their full 50 percent share or the other one-half balance of the appropriate golf car rental rate at all time. D. Two employees (in a group of three or four players) who get free or discounted golf cars, should ride in one golf car together, as two free or discounted golf cars should not be taken with the expectation of having non -employees or part time employees riding for free or discounts. E. All employees may use a golf car free of charge at all times at the course where they work if they are also policing the course, observing course conditions, rangering, or as per the judgement of the Golf Professional. All employees who use a golf car free of charge or at a discount rate will be expected to pick up trash on the course, report any problems, and generally "marshall" while on the course. The above policy statements are subject to change at any time and are not to be considered as guarantees, nor are they to be considered as a form of direct or indirect compensation. All other times at City Park Nine and Collindale are considered Non -Prime Time hours. SouthRidge Non -Prime Time, as based upon reserved /scheduled tee times, are applicable daily from October through March; on Monday, Tuesday, Wednesday, and Thursday only during April; and on Monday, Tuesday, Wednesday, and Thursday (except holidays) from 10:30 AM until 2:30 PM from May through September.
