Dear Mr. Urich:
The plans and specifications resubmitted for the construction of Das Grebel Haus to be located at 638 S.
College, Ft. Collins, Colorado have been reviewed by this department. The following items were not clearly
specified in the plans or were not in compliance with the Colorado Retail Food Establishment Rules and
Regulations. These items must be clearly specified in writing or be modified to be in compliance with the above
regulations. The plans are approved at this time. Be advised a plan review fee of $30.00 per hour will be charged
for time spent reviewing the plans. This fee must be paid before an opening inspection can be scheduled. The
following numbers correspond to the departments Plan Review Letter dated October 13.
1) Proposed menu is acknowledged.
2) The proposed food handling procedures are acknowledged.
3) All food service equipment must be of commercial design, that is certified or classified for sanitation by an
American National Standards Institute (ANSI) accredited certification program or its equivalent. The
following -equipment is-not'approved at this -tune and must be visually inspected is verify -if iris of
- commercial design or specification sheets may be submitted:
a) # 1 Montgomery Ward Freezer —Not approved.
b) 94 Acme Dough Sheeter
c) #6 Hollymatic Patty Former and conveyor
d) #12 Cecilware Cocoa Machine
e) #14 Hot Dog Roller
f) #15 Duke Hot Display Cabinet

4) The proposed refrigeration is limited to one reach -in freezer and three reach -in refrigerators. Be advised
that sufficient conveniently located refrigeration facilities must be provided to assure the maintenance of
potentially hazardous food at 41 ° F during storage and preparation. Total refrigeration capacity of 75 cubic
feet is acknowledged. The proposed refrigeration is conditionally approved at this time provided a
commercial freezer of no less than 30 cubic feet capacity is provided. Be advised that if at any time this
department finds potentially hazardous foods held at inadequate temperatures due to a lack of conveniently
located refrigeration, additional refrigeration will be required.
6) Be advised heavy equipment (e.g.: refrigerators, freezers, fryers, etc) must be mounted on casters to allow
for mobility and easy cleaning. Be advised heavy counter mounted equipment which can not be easily
moved for cleaning must be provided on four inch approved legs to facilitate easy cleaning.
15) This establishment is not approved for any type of grease cooking.
16) Ventilation:
Restrooms exhaust of 50 CFM, for a total establishment exhaust of 100 CFM is acknowledged.
Filtered Replacement air of 600 —1000 CFM is acknowledged.
The ventilation system is approved at this time.
17) The use of all prewashed and processed produce is acknowledged. Be advised that if this department finds
produce being processed at the establishment an approved stainless steel food preparation sink with a
minimum of one 18 inch drain board will be required.
18) Acknowledged.
19) Submitted hand sink locations are approved.
24) A water heater that can achieve a minimum recovery rate of 65 gallons/hour if gas, or 54 gallons/hour if
electric, or has a 59,991 BTU rating or has a 13 KW (kilowatt) rating is required.
The resubmitted Rheem Vanguard water heater with 76 gallon/hour recovery rate (75,500 BTU) is
approved.
2 7) Acknowledged. Chemical dispensing towers will rot be provided.
28) The water inlets to the Moffat Convection Ovens are to be plugged eliminating the need for backflow
protection. Acknowledged.
30) Acknowledged.
37) Acknowledged.
39) Acknowledged.
43) Please be advised that the following items are required in the establishment at the time of the opening
inspection and thereafter:
a) stab food thermometer (0 to 220 F)
b) food grade plastic gloves and/or finger cots
c) approved sanitizer
d) test strips for the sanitizer
e) copy of state sales tax license
44) The Larimer County Department of Health and Environment must receive a completed Retail Food
Establishment License Application, State Sales Tax License number, FUN number, and all applicable
fees before an opening inspection will be scheduled.
The above item (# 3 - a) can be submitted either in written form or as an addendum to the plans submitted.
The written plans submitted are approved at this time. Be advised approval of plans, including the above
modifications, does not constitute acceptance of the completed structure. An inspection of the premises must be

the recommended changes may prevent or delay the licensure of this establishment.
Please notify the department at least 48 hours prior to your opening date so that a final acceptance
inspection can be performed.
This department's written approval is necessary prior to opening.
