The revised lans and additional specifications submitted for the construction of The Winslow
to be located at 9 9 Centre Ave., in Fort Collins, Colorado have been reviewed by this department.
The following items were not clearly specified in the plans or were not in compliance with the
Colorado Retail Food Establishment Rules and Regulations. These items must be clearly specified in
writing or be modified to be in compliance with the above regulations. The plans are approved at this
time. The following items correspond to the August 31, 2004 plan review letter.
1. It is acknowledged that the use of temperature logs will be implemented to
monitor food and refrigeration temperatures.
It is recommended that reheat temperatures be added to these temperature logs.
Please provide a policy on how ill employees will be managed.
9. It is acknowledged that the dishmachine will be a chemical sanitizing machine so
no hood will be required. Please be advised if a hood is provided it must exhaust at
least 450 CFM of air.
11. The addition of a hand washing sinks at the work table/sink (#7) is located and in
the warewashing area is acknowledged.
14. The proposed water heating system is approved. The water heating system must
have a minimum recovery rate of 369.2 gallons/hour at 100°F rise or must have a
410,058 BTU rating. The 500,000 BTU Lars Mighty Therm water heater, model
PW-500, with a 362 gallons/hour recovery rate at 100OF rise is approved.
15. It is acknowledged that no booster heater will be installed with the proposed ADS
chemical sanitizing dishmachine.
19. It is acknowledged that no chemical towers will be installed in kitchen as well as
utility room.

22. It is acknowledged that the buffet table, salad and dessert bars will have sneeze
shields. Please be advised a visual inspection will be required for approval.
25. The proposed location for outside dumpster storage area is approved.
26. It is acknowledged that toxic materials will be stored in the second floor janitor's
closet.
Item #1 can be submitted either in written form or as an addendum to the plans
submitted. The written plans are approved at this time. Be advised approval of plans, including the
above modifications and those outlined in the August 31, 2004 plan review letter, does not constitute
acceptance of the completed structures. Inspections of the premises must be conducted by this
department prior to approval for operation and licensure of the establishment. Failure to follow the
recommended changes may prevent or delay the licensure.
The cost for the time of this second review is billed at a rate of $30 per hour.
Currently review cost for the second review is $90. Please be advised, before the
department can give any approval to for licensure and operation all plan review fees
must be must be paid. The plan review billing invoices for this project are attached.
The establishment is required to obtain a Retail Food Establishment License. An
application for. the required license will be provided by the department prior to the
opening inspection.
Please notify the department at least 48 hours prior to your opening date so a final acceptance
inspection can be performed. This department's written approval is necessary prior to opening.
