The following items were not clearly ecified in the plans or were not in compliance with the Colorado Retail Food Establis ment Rules and Regulations. These items must be clearly specified in writing or b modified to be in compliance with the above regulations prior to approval. The plans re approved at this time. All plans must be approved prior to commencement of construction. Be advised a plan review fee of $30.00 per hour will be charged for time spent reviewing the plans. This fee must be paid before an opening inspection can be scheduled. The following was noted at the time of plan review and at the time of a telephone conversation with Mr. Jim Puett on April 29, 2003: 10. Per the telephone conversation on April 29, 2003, it is acknowledged that the restrooms will be provided with mechanical exhaust ventilation to the outside. 11.An approved stainless steel food preparation sink with a minimum of one 18inch drain board must be provided if fresh produce is prepared as part of a standard menu item. Be advised, this sink must be indirectly drained to sewer. Per the telephone conversation on April 29, 2003, it is acknowledged that a food preparation sink will be located at the corridor hand sink and ware washing area. It is acknowledged that this sink will be indirectly drained to sewer. It is acknowledged that if the installation of the hand sink, the 3-compartment sink and the food preparation sink are located too close together, some type of physical divider will be provided to prevent contamination. 13.The submitted plans indicate the length of the drain boards on each side of the 3- compartment warewashing sink as 18" in length. Be advised, drain boards must be self -draining and at least 36" in length when multi -use dishes are used. Overhead racking or shelves may be used to help meet drain board length requirements. Submit information on how the drainboard requirements will be met. Acknowledged. Iorz � / 6 J a�ee_ I 14.Hand sinks must be easily accessible in all areas where food is prepared, served or where utensils and equipment is washed. The present locations of the hand sinks are not approved. An additional hand sink must be provided in an accessible location to the North wait/service area. It is acknowledged that the 2-way door will be removed to allow easier visibility and access to the hand sink by the food preparation sink. The location of the hand sink is approved. 17.A water heater that can achieve a minimum recovery rate of 136 gallons/hour if gas or 113 gallons/hour if electric, or has a 151,051 BTU rating or has a 28 KW (kilowatt) rating is required. The Rheem water heater, model G75-75 (69 gallons/hour) is not approved. Per the telephone conversation on April 29, 2003, it is acknowledged that the Rheem Ruud water heater, model G91-200, with a recovery rate of 194 gph and has a 199,900 BTU rating will be provided and is approved. 20.It is acknowledged that chemical -dispensing towers will not be provided. 27.The outside dumpster storage area must be located on or above a smooth surface of nonabsorbent material such as concrete or machine laid asphalt. Per the telephone conversation on April 29, 2003, it is acknowledged that the dumpster will be located on a concrete pad. The Larimer County Department of Health and Environment must receive a completed Retail Food Establishment License Application, State Sales Tax License number, FEIN number, and all applicable fees before an opening inspection can be scheduled. The plans are approved at this time. Be advised that Colorado Revised Statutes (1998) 25-4-1605 requires that plans and specifications be submitted to the local health department and approved prior to beginning construction.
