The plans and specifications submitted for the constructionf en &tJerry's'Scoo ho ,1 Old down
Square, STE 140B, Ft. Collins, Colorado, have been reviewed by this department.`"The wm items were
not clearly specified in the plans or were not in compliance with the Rules and Regulations Governing the
Sanitation_ of Food- Service Establishments- in- the State- of Colorado. T hese- items must be clearly specified in
writing or be modified to be in compliance with the above regulations prior to approval of the submitted plans.
The written plans are .approved at this time. All plans must be approved prior to commencement of
construction:
1) All food service equipment must be NSF (National Sanitation Foundation) approved or its equivalent.
Domestic equipment is not approved. The following equipment is not approved at this time due to
lack of information and/or lack of NSF approval. Submit make and model numbers and specification
sheets on the following equipment: dipperwell (7), chest freezer (8), refrigerator (9), prep table with
sink (15), and soda dispenser (not listed).
4) Ventilation:
A positive air pressure must be maintained within the establishment at all times. Makeup air must be
filtered, tempered during winter months (when exhaust exceeds 2500 cfm), mechanically introduced into
the establishment at a volume equal to or greater than what is being exhausted and, the kitchen should
be under a slightly negative pressure so that make up air can be exhausted through the kitchen exhaust
system after it moves from the dining area into the kitchen. Provide information on how positive air
pressure will be maintained ui the establishment.
5) Restrooms must be provided with mechanical ventilation to the outside air. Submit information
indicating if ventilation is provided, and the cfm rating of the exhaust fans.
9) Approved, provided 36" of commercial wire shelving is provided above the sink for the air drying of
clean equipment and utensils.

13) Approved, provided that the floor sinks are moved as discussed.

16) All plumbing and electrical conduit are to be installed within and behind walls or below floors.
Exposed water pipes, sewer lines, or electrical conduit running along walls or floors are not
approved.
20) All lights in thkitchen, storage rooins, service counter-s, sciving-area, dibliwashing areas, walk-ins,
and all food prep areas must be shielded in an approved manner. Be advised, all lights inside
equipment must also be shielded. Provide information about light shields for the can and track lighting.

29) The use of Coopersmith's dumpster storage area by Ben & Jerry's Scoop Shop is not approved.
Inspection histories of its users (e.g. Coopersmith's, Pasta Jay's) indicate that the dumpster area is not
of adequate size for its current use, its users are regularly cited for trash on the ground and leaving the
dumpster lids open. The area is also used by several non-food service tenants that contribute to the
problem. Provide information about an alternative trash disposal plan.
30) Please be advised that the following items are required in the establishment at the time of the opening
inspection and thereafter:
a) stab food thermometer (0 to 220 F)
b) food grade plastic gloves and/or forger cots
c) approved sanitizer .
d) test strips for the sanitizer
The above items (# 1, 4, 5, 20, 29) can be submitted either in written form or as an addendum to the
plans submitted. The written plans submitted are approved at this time. Be advised approval of plans,
including the above modifications, does not constitute acceptance of the completed structure. An inspection
of the premises must be conducted by this department prior to approval for operation and licensure of the
establishment. Failure to follow the recommended changes may prevent or delay the licensure of this
establishment. If construction is not commenced within 120 days, any approval of the plans will be null and
void and plans will have to be resubmitted along with a $75.00 plan review fee for a second review.

Please notify the department at least 48 hours prior to your opening date so that a final acceptance
inspection can be performed.
This department's written approval and the receipt of a completed state food service license application
and applicable fees is necessary prior to opening.
