Re: Grease trap for Pizza Street restaurant
Dear Mr. Williams:
After receiving assurances from you that a minimum amount of grease will be generated
during the operation of the above referenced restaurant, which I understand is to be located at
1320 West Elizabeth_Street,-a decision has been made to allow the finalization of your plans
without the installation of a grease trap.
In the future, as a part of a program to limit grease in the City's sewer system, sanitary
sewer mains and services will be monitored throughout the City. If grease is being
introduced into the sewer system from the Pizza Street Restaurant, the owner of the restaurant
will have to install a grease trap. In the event that the owner refuses to comply, the City has
the right to discontinue water service to the premises until compliance with the grease
regulations are met.
