LARIMER COUNTY Tr ti I V, May 1, 1998 Scott Lias Rasta Pasta P.O. Box 1775 Breckenridge, CO 80424 Dear Mr. Lias, DEPARTMENT OF HEALTH AND ENVIRONMENT 1525 Blue Spruce Drive Fort Collins, Colorado, 80524-2004 General Health (970) 498-6700 Environmental Health (970) 498-6775 Fax (970) 498-6772 a 9 The plans and specifications resubmitted for the construction of Rasta Pasta at 200 Walnut Street, Fort Collins, Colorado, have been reviewed by this department. The following items were noF c earT Ty -specified ted in the plans or were not in compliance with the Rules and Regulations Governing the Sanitation of Food Service Establishments in the State of Colorado. These items must be clearly specified in writing or be modified to be in compliance with the above regulations prior to approval of the submitted plans. The plans are not approved at this time. All plans must be approved prior to commencement of construction. 1) All food service equipment must be NSF (National Sanitation Foundation) approved or its equivalent. Custom made equipment and used equipment cannot be approved until it is visually inspected. The following equipment is used or custom made and requires visual inspection for approval: bar sink (7), wall shelf (18), back bar (2), worktable (10), pass -shelf (11), glass rack (33), rack shelf (20a), kitchen 3- compartment sink (25), and wall shelf (26). The following equipment is not approved at this time due to lack of information and/or lack of NSF approval: soda dispenser (3). During the April 24, 1998 menu review you indicated that the walk-in cooler shelving (not listed), and basement storage room shelving (not listed) would be of commercial, NSF approved, wire construction. Please submit make and model numbers and specification sheets of the soda dispenser (3). 3) Be advised that no appurtenances, such as syrup lines, carbonators, drop -in cold plates, drain lines or bottle holders are permitted in potable ice bins or ice machines or any unit used to store potable ice. 4) The submitted ventilation schedule and kitchen oven exhaust hood plans have been reviewed. The ventilation system is not approved at this time. The following aspects of the submitted ventilation plans were not approved: d) The maximum volume of make-up air mechanically introduced into the hood plenum (interior and exterior) should be no more than 80% of the volume of air the hood is exhausting, in this case 80% of 1505 CFM, or 1204 CFM. The air balance report found 1355 CFM being reintroduced into the hood's plenum, 151 CFM high or 90% of 1505 CFM. Reduce the CFM of air introduced into the hood's plenum to 1204 CFM or lower and redirect the remaining make-up air elsewhere in the establishment. Submit information addressing this issue. Also the hood's make-up air fan is specified by its manufacturer (Greenheck) to move only 1155 CFM of air, yet the plan calls for it to move 1355 CFM. Submit information explaining this discrepancy. Howes • P.O. Box 503 Fort Collins, Colorado 80521-0503 (970) 484-0359 Fax: (970) 484-0454 Terracon has completed a geotechnical engineering exploration for the proposed residence to be constructed on the above -referenced lot. One test boring was drilled in the approximate center of the lot and a relatively undisturbed sample was obtained for laboratory testing and analysis. The materials tested on the site are classified as low swelling based on the Colorado Association of Geotechnical Engineers (CAGE) criteria. Geotechnical recommendations for design of foundations and other earth connected phases of this residence were developed based on the referenced exploration for the overall subdivision, and the borings drilled in this and adjacent lots. Terracon's recommendations are summarized below. Foundation Recommendations Spread footing foundations bearing upon undisturbed subsoils, recompacted native soils and/or bedrock are recommended for support of the proposed structure. Basement Construction Groundwater was not encountered on this lot to the depth explored. Bedrock was not encountered to a depth of 15 feet. Full -depth basement construction is considered acceptable, provided a complete dewatering system is provided around the lower basement area. The dewatering system should contain a drain constructed around the exterior perimeter of the basement foundation and sloped at a minimum 1/8 inch per foot to a suitable outlet, such as a sump or area drain. 981600 Anzona ■ Arkansas ■ Colorado ■ Idaho ■ Illinois ■ Iowa ■ Kansas ■ Minnesota ■ Missouri ■ Montana Nebraska ■ Nevada ■ New Mexico ■ North Dakota ■ Oklahoma ■ Tennessee ■ Texas ■ Utah ■ Wisconsin ■ Wyoming Quality Engineering Since 1965
