The plans are approved at this time. Be advised a plan review fee of $30.00 per hour will be charged for time spent reviewing the plans. This fee must be paid before an opening inspection can be scheduled. 1) Comments on submittals for procedures manuals: Sanitation and Cleanliness o Cooling section. Please be advised, that if any potentially hazardous foods are cooled, they must be cooled to 70°F in the first two hours of cooling, then down to 41 °F in the next 4 hours. o Proper 3 compartment sink washing. Fourth step indicates the pH test strips should be used to check the pH level at the third sink. Provide test kits (test strips) that will indicate the sanitizer concentration; use test strips according to manufacturer's directions. o Spray bottles/sanitizer pails. First step indicates to fill bottles/pails with dish soap and sanitizer. Be advised, sanitizer is not as effective when combined with soap; please clarify instructions so that these are used separately. Product Procedures Manual o Please be advised, the soft serve yogurt machine must be cleaned and sanitized on a daily schedule unless the machine is designed with a heat treatment cycle. Leftover mix is not to be "recycled" or remixed with fresh product. 2) Location of the dipper well acknowledged. 14) Removal of the grease trap acknowledged. 19) The A. O. Smith water heater, model DEL 40 (2 at 6 kW) is approved, provided that the elements are installed to operate simultaneously, giving the unit a 49 gph recovery as specified by the manufacturer. Please provide documentation from either the manufacturer or installer of the water heater that the elements will be installed to operate simultaneously. 20) Drainage of the dipper well acknowledged. 23) The Watts 9BD is approved for the soft drink machine. L0FZ Backflow preventer for the yogurt machine sprayer acknowledged. 26) At least- l0 foot candles of light- must- be -provided in ail- areas of tht� walk-in freezer. Be advised a single light inside the walk-in may not be adequate to provide the required lighting. 36) The Latimer County Department of Health and Environment must receive a completed Retail Food Establishment License Application, State Sales Tax License number, FEIN number, and all applicable fees before an opening inspection will be scheduled. The above item (# 19) can be submitted either in written form or as an addendum to the plans submitted. The written plans submitted are approved at this time. Be advised approval of plans, including the above modifications, does not constitute acceptance of the completed structure. An inspection of the premises must be conducted by this department prior to approval for operation and licensure of the establishment_ Failures tQ follow the recommended changes may prevent or delay the licensure of this establishment. If construction is not commenced within 120 days, any approval of the plans will be null and void and plans will have to be resubmitted along with a $75.00 application fee and additional hourly fees for a second review. Please notify the department at least 48 hours prior to your opening date so that a final acceptance inspection can be performed. This department's written approval is necessary prior to opening.
