Dear Mr. Meyer:
The plans and specifications submitted for the construction of Carrabba's Italian Grill to be located on
Oakridge Drive in Fort Collins, Colorado, have been reviewed by this department. The following items were
not clearly specified in the plans or were not in compliance with the Rules and Regulations Governing the
Sanitation of Food Service Establishments in the State of Colorado. These items must be clearly specified in
writing or be modified to be in compliance with the above regulations prior to approval of the submitted plans.
The plans are not approved at this time. All plans must be approved prior to commencement of construction.
1) All food service equipment must be NSF (National Sanitation Foundation) approved or its equivalent.
Custom made equipment and used equipment cannot be approved until it is visually inspected.
a) Submit make and model numbers and specification sheets on the following equipment: bread
slicer (#16), espresso machine (#26), coffee grinder (#27), blender (#29), iced tea bre-,er (#35),
coffee brewer (#36), food warmer (#41), prep refrigerators (#54-60), coffee warmers (#62), bake
oven (#63), and wood burning pizza oven (#78), shelving units (#80), portio! -ale '-92), food
processor (#94), ingredients bins (#96), freezer and walk-in cooler shelves (#111 & 115), walk-in
cooler and freezer (#112 & 113), and small juicer (#132).
b) The salad spinner (#89) is not NSF approved. Please submit information on an alternative piece
of equipment that is NSF approved.
