Dear Mr. Gordon,
The plans and specificati /'s resubmitted for the construction of Edible
Arrangements to be located at 706 S. College #103 in Ft. Collins, Colorado, have been
reviewed by this department. The plans are approved at this time. The following
items correspond to the November 6, 2006 letter:
2. The policies and procedures submitted for temperature monitoring, restricting ill
food workers, managing employees with cuts and sores, and minimization of
bare hand contact have been reviewed and acknowledged.
3. It is acknowledged that the True refrigerated merchandiser is to be located in the
front sales area. Please be advised this cooler must installed on casters.
4. The information submitted on the refrigerated delivery truck has been reviewed
and is acknowledged. Please be advised the truck must be capable of holding the
potentially hazardous foods at 41 OF or below.
13. It is acknowledged that the 3-compartment sink used for ware washing will have
two 24 inch drainboards, as per email response received December 5, 2006.
15. It is acknowledged that the wrapping station will now be located directly across
from the walk in cooler and next to the 3-compartment sink so that it is more
accessible to the hand sink in the prep area.

mop sink or 3-compartment sinks as per email response received December 4,
2006.

In a ddition t o t he $ 75 p Ian r eview application f ee p aid a t t he t ime t he plans w ere
submitted for review, a review fee is assessed for the actual review time. The review fee
is assessed at a rate of $40 per hour. Currently review. cost for this project is $200.
Please b e advised, b efore the d epartment c an give any approval for operation a Il p Ian
review fees must be must be paid. The plan review billing invoices for this project are
attached.
The written plans are approved at this time. Be advised approval of plans,
including the above modifications and those outlined in the November 6, 2006 plan
review letter, does not constitute acceptance of the completed structures. Inspections of
the premises must be conducted by this department prior to approval for operation and
licensure of the establishment. Failure to follow the recommended changes may prevent
or delay the licensure. .
