Collins, Colorado have been reviewed by this department. The following items were not clearly specifi@ .w.the plans or were not in compliance with the Rulesgills r - rho SaniLtinn of Food Service G«ahlichm tits 'n the State of Colorado. The plans are approved at this time. Notes: The project consists of removing existing salad bar, concrete base, cap plumbing, and relocating lights. Removing old service counter and replacing with new service counter to be finished with FRP panel. The existing floor drain will be replaced with a floor sink under the new service counter. Replacing the condiment cabinet with a new condiment cabinet. Existing hoods will be wrapped in stainless steel. Handsiok locations will remain near food and utensil preparation. 1) All drain lines from equipment such as: ice machines, ice bins, drink dispensers, drink overflow drains, refrigeration/freezer units, walk-in compressors and cold tables holding ice must be dmocted to a floor drain or floor sink and be omoerly Lgarmed. 2) Floor sinks trust not be installed under equipment or cabinetry where they cannot be cleaned. At least 20 foot candles of light must be provided in dining areas during cleaning operations. All lights in the above areas, except for the dining area, trust be shielded in an approved manner. Be advised, all lights inside equipment must also be shielded. 5) Floors, walls, ceilings, counter tops, storage shelves, cabinets and all work surfaces located within the kitchen, restroom, wait station, customer self-serving area, and all food prep areas must be of an approved material that is smooth, easily cleanable, nonabsorbent and of a light color. 6) All paints used on the walls and ceilings roust be: commercial grade, washable, without removing the paint when cleaned; light in color. A high gloss paint is recommended. 7) The plans include wrapping the hoods in stainless steel, a visual inspection of the completed work is necessary to assure the surfaces and seems are made to be smooth, and easy to clean. 8) Careful implementation of a plan to avoid cross contamination of the food preparation and dining area must be observed during the remodeling project. Failure to properly provide protection from dust, fumes, vapors and other hazards could result in the tetnporary, closure of the food service activities. Please notify the department at least 48 hours prior to your opening date so that a final acceptance inspection can be performed.
