RE: Approval of Renato Oven Model AR-600
This will serve as confirmation of approval by the City of Fort
Collins to install and operate the gas -fired oven above in your
establishment, based on the following understanding and conditions:
1. The Renato oven above is a gas -fired device with an
automatic thermostat control and is designed for
limited wood use, primarily as a flavoring agent.
2. The oven will be started and maintained at approximately
700' F solely by the use of gas.
3. Only enough cured wood will be introduced into the oven,
not more than twice daily, to flavor food.
4. Monthly total wood consumption will be limited to one -
quarter cord.
5. Coopersmith's will extend the oven chimney well above
adjacent roofs and nearby air intakes to prevent emissions
entering HVAC systems, and will terminate the chimney with
an approved spark arrestor and cap to prevent downdrafts.
6. Coopersmith's will be sensitive to not using wood when
conditions prevent adequate dispersion of oven emissions.
Coopersmith's hereby agrees to the terms of this understanding and
acknowledges that failure to meet any those terms specified above
may result in revocation of this approval for burning wood.
