A regular meeting of the Liquor Licensing Authority was held February 10, 2016 in Municipal Court, 215
North Mason. Judge Kathleen M. Lane presiding.

Hearing on a New Application from Foothills Pizzeria, Inc.,
for a beer and wine license at
Grimaldi's Pizzeria, 327 East Foothills Parkway, Suite 110, Approved
Eric Greenwald, CEO of Coal Brick Oven Colorado, Inc., was sworn. He stated he is familiar with the
operations of Grimaldi's Pizzeria and described the history the organization. Mr. Greenwald stated this
is their third location in Colorado and hope to open in the next two weeks. He stated there will six other
restaurants within close proximity to Grimaldi's. Mr. Greenwald stated their percentage of gross sales
coming from alcohol is approximately 15% and that they are primarily a pizzeria. He described the
training employees are required to complete prior to being allowed to serve alcohol. Mr. Greenwald
stated any patron who appears to under the age of 35 who orders an alcoholic beverage will be required
to produce a valid ID. He stated they employ Image Experts to conduct Secret Shopper routines twice
a month for the first year. Mr. Greenwald stated that any employee found in violation of the liquor code
is immediately terminated.
Sue Duffy Schwall, representative for Liquor Licensing Professionals, LLC, was sworn. She briefly
described the petitioning process and the results of the survey. Ms. Duffy Schwall stated that 98% of
those petitioned were in support of this application.
Judge Lane adopted Resolution 2016-005 approving a beer and wine license from Foothills Pizzeria, Inc.,
dba Grimaldi's Pizzeria, at 327 East Foothills Parkway, Suite 110.
