Staff Liaison: Aimee Jensen A regular meeting of the Liquor Licensing Authority was held on October 15, 2007 in Municipal Court, Justice Center, 215 North Mason. Judge Kathleen M. Lane presiding. Staff in attendance: Teresa Ablao, Assistant City Attorney Aimee Jensen, Deputy City Clerk Aeenda Review Deputy City Clerk Jensen stated there are no changes to the agenda. Approval of Minutes Judge Lane approved the minutes from September 24, 2007, January 5, 2004, January 26, 2004, February 9, 2004, March 1, 2004, March 22, 2004, April 19, 2004, May 3, 2004, and May 10, 2004. Manager Registration of Brian P. Kirkby as Manager of Ruby Tuesday, 110 Boardwalk Drive Approved Brian Kirkby, manager applicant, stated he has been with Ruby Tuesday for 10 years. He briefly described his background. Mr. Kirkby stated Ruby Tuesday has one of their trainers train any new employees. He stated any patron ordering alcohol is carded. Mr. Kirkby stated any employee found in violation of the liquor code is immediately terminated. He stated he has a current copy of the liquor code on premise. Judge Lane approved the registration of Brian Kirkby as manager of Ruby Tuesday, 110 Boardwalk Drive. October 15, 2007 Transfer of Ownership of Ali Buffet, 1100 South College Avenue from GXL, LLC to Number 1 Buffet, LLC and Trade Name Change to Number 1 Buffet Approved Brian Lin and Janet Chen, representatives for Number 1 Buffet, LLC, briefly described their background through an interpreter, Bob He. Ms. Chen stated she has received limited training regarding the sale and service of alcohol. She stated they have only made cosmetic changes to the premise. Ms. Chen stated any patron ordering alcohol is carded. She stated they have a current copy of the liquor code on premise. Senior Assistant Attorney Ablao requested clarification on the diagram. Ms. Chen stated the beer and wine storage is not locked, but is off limits to patrons. Judge Lane approved the transfer of ownership of Ali Buffet, 1100 South College Avenue from GXL, LLC to Number 1 Buffet, LLC and trade name change to Number 1 Buffet, contingent upon a completed background check, that the owners and their employees receive TIP's or equivalent training within 30 days, and that Officer Younger completes a site visit to verify the information provided on the site diagram. Hearing on a New Application from Chipotle Mexican Grill, Inc., for a hotel -restaurant liquor license at Chipotle Mexican Grill, 2120 East Harmony Road Suite 107 Approved Kevin M. Coates, attorney representing Chipotle Mexican Grill, Inc., stated that representatives for the licensee are present and ready to proceed. Susan Duffy Schwal, representative for Liquor Licensing Professionals, LLC, was sworn. She briefly described her background and detailed the petitioning process. David Cannon, area manager for Chipotle Mexican Grill, Inc., was sworn. He briefly described the Chipotle restaurant concept. Mr. Cannon stated they will be opening January 2008. He stated alcohol sales amount to approximately 1 % of gross sales. Mr. Cannon stated the cash register is the control point for the sale of alcohol. He briefly described the training employees must complete prior to selling alcohol. Mr. Cannon stated he will require the future registered manager to have a current copy of the liquor code. Jimmy Guerrette, manager, was sworn. He stated any person purchases a alcoholic beverage must provide a valid id. Mr. Guerrette briefly described his background.
