A regular meeting of the Liquor Licensing Authoritywas held on February27, 2012 in Municipal Court,
215 North Mason. Judge Kathleen M. Lane presiding.

Approval of Minutes
Judge Lane approved the minutes from February 13, 2012.
Registration of Daniel Nicklas as
Manager of HuHot Express,
2720 Council Tree Avenue, Suite 184, Approved
Daniel nicklas, manager applicant, stated he has been in the restaurant business for over 25 years. He
stated he has had TIP's training and that he supervises 18-24 employees. Mr. Nicklas stated they are
currently requiring all employees involved in the sale or service of alcohol to be TIP's trained. He stated
any patron that orders alcohol requires to present an ID. Mr. Nicklas stated he has not had any
problems with visibly intoxicated patrons and that any employee found in violation of the liquor code
is immediately terminated. He stated they have a current copy of the liquor code on premise.
Judge Lane approved the registration of Daniel Nicklas as manager of HuHot Express, 2720 Council
Tree Avenue.
Transfer of Ownership of Genoa Coffee & Wine,
2614 South Timberline Road from Kamiojero Holdings, Inc., to
Colorado Expresso & Wine, LLC, Approved
Dianne Barden, representative for Colorado Expresso & Wine, LLC, stated her background has been
in education and that this is her first venture into business. She stated the previous owners will provide
80 hours of training to Diane and her husband. Ms. Barden stated she and her husband will be TIP's
trained. She stated many of the employees are experienced with the sale and service of alcohol. Ms.
Barden stated the cash register requires a date of birth to be entered when an alcohol sale is rung up.
She stated any employee found in violation of the liquor code is immediately terminated. Ms. Barden

stated they are only making cosmetic changes to the premises. She stated they are only open until 9:00
p.m
In response to a question from the Authority, Ms. Barden stated they will complete their training with
the previous owners by the end of March, 2012.
judge Lane approved the transfer of ownership of Genoa Coffee & Wine, 2614 South Timberline Road
from Kamiojero Holdings, Inc., to Colorado Espresso & Wine, LLC
Hearing on a New Application from
Ingredient Ft. Collins, LLC, for a hotel -restaurant liquor license at
Ingredient, 101 South College Avenue, Approved
Kami Tuttle, representative for Ingredient Ft. Collins, LLC, was swom. She stated guests having been
asking for alcoholic beverages beyond beer and wine. In response to a question from the Authority,
Ms. Tuttle stated currently they are a fast casual type restaurant. She stated every patron that order
alcohol is required to provide a current id. Ms. Tuttle stated that their alcohol sales are less than 5% and
anticipates that it will increase slightly with a full liquor license. She stated they will not extend their
hours. Ms. Tuttle stated there are no changes to the patio and that theyhave not had anyproblems with
alcohol service on the patio. She stated they have not had any issues with visibly intoxicated patrons.
Ms. Tuttle stated theyhave not had anyliquor code violations and that anyone in violation of the liquor
code will be immediatelyternunated.
Max Scott, owner of Oedipus, Inc., was swom. He briefly described the petitioning process and the
result of the petitions. Mr. Scott stated a 99% approval for this application is a high return.
judge Lane adopted Resolution 2012-12 approving an application from Ingredient Ft. Collins, LLC, for
a hotel -restaurant liquor license at Ingredient, 101 South College Avenue.
