Regular Meeting - April 23, 2012

A regular meeting of the Liquor Licensing Authority was held on April 23, 2012 in Municipal Court,
215 North Mason. Judge Kathleen M. Lane presiding.

tration of Stephanie Shaffer as
Stephanie Shaffer, manager applicant, stated she has been a manager since 2004. She stated that she
regularly discusses how important it is to follow all liquor laws. Ms. Shaffer stated that any employee
found in violation of the liquor code is immediately terminated. She stated it is company policy that
they do not accept vertical id's even if they are valid. Ms. Shaffer stated she has a current copy of the
liquor code on premise.
Judge Lane approved the registration of Stephanie Shaffer as managerof Red Robin, 701 East Harmony
Road.
Request from CooperSmith Brewing Company,
dba CooperSmith's Pub and Brewing to
Sandra Longton, representative for CooperSmith's Brewing Company, brieflydescribed the proposed
changes. She stated this addition will allow for more private parties, but will otherwise be open for
public use. Ms. Longton stated they will have a wait station monitoring this new area. In response to
a question from the Authority, Ms. ?? stated all the appropriate city departments have reviewed these
plans. She stated thast the rest of the premises will stay the same. Ms. ?? briefly described the
petitioning process. She stated that they have received many positive comments in support of this
application.
Judge Lane approved the modification of premise of CooperSmith's Pub and Brewing to change, alter,
or modify the licensed premises at # 5 Old Town Square.

Request from AOC, Inc., dba
Drake Park Restaurant & Lounae to
Paul Pellegrino, representative for AOC, Inc., stated he is requesting to add the patio to their licensed
premises. He stated this addition will increase their seating capacity by approximately 100 seats. In
response to a question from the Authority, Mr. Pellegrino briefly described the proposed changes. He
stated if patrons are on the patio, he will have staff available to monitor those patrons. Mr. Pellegrino
stated the new fencing will match the existing wrought iron fencing.
Judge Lane approved the request from AOC, Inc., dba Drake Park Restaurant & Lounge to change,
alter or modify the licensed premises at 802 West Drake Road.
Request from U.C. Bandits, Inc., dba
DP Dough to Temporarily Change, Alter, or Modify the
Licensed Premises at 634 South College Avenue on May 19, 2012 from
5:00 p.m. to 9:00 p.m., Approved
Michael Davie, representative for U.C. Bandits, Inc., stated they have not had any problems at past
events. He stated this is a fund raiser for SafeHouse. In response to a question from the Authority, Mr.
Davie stated that he petitioned the neighborhood and received positive comments in support of this
application.
Judge Lane approved the request from U.C. Bandits, Inc., dba DP Dough to temporarily change, alter,
or modify the licensed premises at 634 South College Avenue on May 19, 2012 from 5:00 p.m to 9:00
p.m.
Tastings Permit Application from
Uptown Liquors, Inc., dba
Uptown Liquors, 1833 East Harmon Road, # 3, Approved
Morgan Anderson, representative for Uptown Liquors, Inc., was swum and briefly described howthey
will be conducting beer and wine tastings. She stated that both she and the owner, Eric Olson, have
been recently TIP's certified. Ms. Anderson stated that each patron wishing to participate in a tasting
will be required to have a wrist band and carry a punch card. She stated the other employees will also
be TIP's trained. In response to a question from the Authority, Ms. Anderson briefly described the
petitioning process, stating that she received many positive comments in support of this application.

Judge Lane approved the tastings permit application from Uptown Liquors, Inc., dba Uptown Liquors,

Hearing on a New Application from Kung-Food Kitchen, Inc.,
for a beer and wine license at Simply Thai,
2531 South Shields Street, 2-M, Approved
Ekawat Sunti, representative for Kung-Food Kitchen, Inc., was swom. Anna Cordova, manager, was
also swom. She stated she has received extensive training with respect to the sale and service of alcohol.
Ms. Cordova stated she will be primarily responsible for training the rest of the employees in the sale
and service of alcohol. Mr. Sunti stated he will be primarily a restaurant and that he does not expect
alcohol sales to be more than 25% of total sales. He stated they will be open the same hours they are
now. Ms. Cordova stated theyare a full service restaurant. Mr. Sunti stated there are 8 total employees,
with 4-5 are front of the house. Ms. Cordova stated they will card any patron that orders alcohol. She
stated anyemployee found in violation of the liquor code will be immediately terminated. Ms. Cordova
stated they intend to keep a current copy of the liquor code on premise.
Mr. Sunti and Ms. Cordova briefly described the petitioning process. Ms. Cordova stated that they
received many positive comments in support of this application.
Judge Lane adopted Resolution 2012 - 03 approving the application from Kung-Food Kitchen, Inc.,
for a beer and wine license at Simply Thai, 2531 South Shields Street, 2-M.

Celestino Colorado, LLC for a beer and wine license at
Celestino's NY Pizza, 306 West Laurel Street, # 113, Approved
Nicholas Tindell, representative for Celestino Colorado, LLC, briefly described his background. He
stated he has received many requests from patrons for a beer and wine license. Mr. Tindell stated they
have a two drink maximum for each patron. He stated they have a patio but will not be allowing
alcohol on the patio. Mr. Tindell stated they are only open until 11:00 p.m., and expect food sales to
beat least 75% of their total sales. He stated he has offered a raise to any employee who becomes TIP's
certified. Mr. Tindell stated any employee found in violation of the liquor code will be immediately
terminated. He stated he has a current copy of the liquor code on premise.
Ellyn Just, petitioning employee, was sworn. She brieflydescribed the petitioning process.
Judge Lane adopted Resolution 2012-05 approving the application from Celestino Colorado, LLC, dba
Celestino NY Pizza for beer and wine license at 306 West Laurel Street.
