Regular Meeting - September 18, 2006

A regular meeting of the Liquor Licensing Authority was held on September 18, 2006 in Municipal
Court, Justice Center, 201 LaPorte. Judge Kathleen M. Lane presiding.

Agenda Review
Deputy City Clerk Jensen stated there are no changes to the agenda.
Approval of Minutes
Judge Lane approved the minutes from August 21, 2006.
Registration of Jason Hensley Weaver
as Manager of Chili's Hamburger Grill & Bar,
3524 South College Avenue, Approved
Jason Hensley Weaver, manager applicant, stated he has been in the restaurant business for 24 years.
He briefly described his background and training he has received. Mr. Weaver stated the licensee
requires all management staffto attend a comprehensive training session. He stated all servers attend
a 5 day training class prior to being allowed to serve. Mr. Weaver stated any patron who appears to
be 30 years of age or younger is carded. He stated any employee found in violation of the liquor
code is immediately terminated. Mr. Weaver stated he has a current copy of the liquor code on
premise.
Judge Lane approved the registration of Jason Hensley Weaver as the manager ofChili's Hamburger
Grill & Bar, 3524 South College Avenue.
Registration of Brooks Gordon as Manager
of Old Chicago's, 4709 South Timberline Road, Approved
Brooks Gordon, manager applicant, briefly described his background. He stated he is responsible

for training all Old Chicago employees in northern Colorado. Mr. Gordon stated any employee
found in violation of the liquor code is immediately terminated. He stated he has a current copy of
the liquor code on premise.
Judge Lane approved the registration of Brooks Gordon as manager for Old Chicago, 4709 South
Timberline Road.
Registration of Sean Gill as
Manager of Black -Eyed Pea,
4312 South College Avenue, Approved
Sean Gill, manager applicant, briefly described his background. He stated all employees are required
to card any patron that appears to be 40 years of age or younger. Mr. Gill described the training all
managers and employees are required to complete. He stated any employee found in violation of the
liquor code is immediately terminated.
Judge Lane approved the registration of Sean Gill as manager of Black -Eyed Pea, 4312 South
College Avenue.
Registration of Mark Culloton as
Manager of Austin's American Grill,
100 West Mountain Avenue, Approved
Mark Culloton, manager applicant, briefly described his background. He stated he is a certified
trainer in the sale and service of alcohol. Mr. Culloton stated any patron that appears to be 40 years
of age or younger is carded. He stated any employee found in violation of the liquor code is
immediately terminated.
Judge Lane approved the registration of Mark Culloton as manager of Austin's American Grill, 100
West Mountain Avenue contingent upon attending Liquor Enforcement Officer Younger's training
class.
Tastings Permit Application from
Pringle Enterprises, Inc., dba
Pringle Brothers Fine Wine & Spirits,
2100 West Drake Road. #11. Approved
Phil Pringle, representative for Pringle Enterprises, Inc., briefly described the premise and how
tastings will be conducted. He stated any employee serving samples will be TIPS trained. Mr.
Pringle stated patrons sampling will not be allowed leave the area where they are being conducted.
He briefly described the petitioning process. Mr. Pringle stated the neighborhood was in favor of
this application.

Judge Lane approved the tastings permit application from Pringle Enterprises, hie., dba Pringle
Brothers Fine Wine & Spirits, 2100 West Drake Road, 911, contingent upon Mr. Pringle confirming
his tastings control plan with Liquor Enforcement Officer Younger.
Hearing on a New Application from
Caf6 Columbine, LLC, for a
Hotel -Restaurant Liquor License at
Caf6 Columbine, 802 West Drake, Approved
Bob Wilson, representative for the licensee, was sworn and briefly described his plans for the
premise. He stated the restaurant will primarily be open for breakfast and lunch. Mr. Wilson stated
the license will be used for banquet events. He stated it is likely that alcohol will only be served at
private evening events. Mr. Wilson stated he will not be serving alcohol on the patio. He stated he
will not be involved in the day to day operations of the restaurant. Mr. Wilson stated he has a current
copy of the liquor code on premise.
Assistant City Attorney Ablao stated the petitions demonstrate a need and desire that this application
be approved.
Judge Lane adopted Resolution 2006-10 approving the application from Caf6 Columbine, LLC, for
a hotel -restaurant liquor license at Caf6 Columbine, 802 West Drake, contingent upon Mr. Wilson
attending Liquor Enforcement Officer Younger's training.
Hearing on a New Application from
Loyd, LLC for a Beer and Wine License
at Taco Del Mar,1205 A West Elizabeth, Approved
Paul Michaelson, representative for Loyd, LLC, was sworn. He briefly described his background
and the premise. Mr. Michaelson stated he attended Officer Younger's training in May. He stated
he will be responsible for training the servers. Mr. Michaelson stated beer and wine will be
approximately 5% of their gross sales. He stated any patron ordering beer or wine will be carded.
Mr. Michaelson stated any employee found in violation ofthe liquor code is immediately terminated.
Mr. Michaelson briefly described the petitioning process. He stated they received support for this
application.
Judge Lane adopted Resolution 2006-11 approving the application from Loyd, LLC for a beer and
wine license at Taco Del Mar, 1205 A West Elizabeth.
