Consent Agenda Approved • Liquor Enforcement Update • • Show Cause Hearing for Kong’s Restaurant, Inc., dba Simply Thai, 2531 South Shields Street, 2M, Stipulation Agreement for Kong’s Restaurant, Inc., dba Simply Thai w Chen Kongguo, representative for Kong’s Restaurant, Inc., stated he has had an opportunity to review Docusign Envelope ID: D8B16440-E4A3-438D-8E50-BD3309106FEA June 25, 2025 P a g e 2 | 4 Assistant City Attorney Coulehan reviewed the terms of the stipulation agreement, noting the licensee agreed to a 17-day suspension, 5 days served from the start of business on July 2, 2025 through the end of business on July 6, 2025, with 12 days held in abeyance for 1 year for violating C.R.S. 44 -3- 901(1)(b)(I) of the Colorado Liquor Code – Sales/Service to Minors Prohibited. Associate Municipal Judge Nieto approved the findings, conclusion and order, accepting the stipulation agreement as presented for Kong’s Restaurant, Inc., dba Simply Thai, 2531 South Shields Street, 2M. Show Cause Hearing for Suh Sushi, Inc., dba Suh Sushi, 165 East Boardwalk Drive, Stipulation Agreement Sung Won Suh, representative for Suh Sushi, Inc., stated he has had an opportunity to review the stipulation agreement and has agreed to the terms. Assistant City Attorney Coulehan reviewed the terms of the stipulation agreement, noting the licensee agreed to a 16-day suspension, 5 days served (paid $ 500 fine in lieu of suspension), with 11 days held in abeyance for 1 year for violating C.R.S. 44 -3-901(1)(b)(I) of the Colorado Liquor Code – Sales/Service to Minors Prohibited. Mr. Suh asked Associate Municipal Judge Nieto about server training requirements in the stipulation agreement and scheduling complications. Officer Ripsam explained that September has availability, but that is outside of the agreed upon sixty-day window to complete training. Associate Municipal Judge Nieto asked Assistant City Attorney Coulehan if she would be amenable to amending the stipulation agreement to allow for ninety (90) days to complete training. Assistant City Attorney Coulehan stated that the City would accept these terms, and the agreement would be updated to reflect the change. Associate Municipal Judge Nieto approved the findings, conclusion and order, accepting the amended stipulation agreement for Suh Sushi, Inc., dba Sush Sushi, 165 East Boardwalk Drive. Transfer of Ownership Application from Generation Next Corp, dba Maida Trattoria, 100 North College Avenue, Approved McCabe and Marli Callahan, representatives for Generation Next Corp, briefly described the premises and that this concept is different than the two coffee shops that currently hold liquor licenses. Mr. Callahan stated that all employees will be required to complete training before they are allowed to serve alcohol. Assistant City Attorney Coulehan reviewed the terms of the stipulation agreement, noting the licensee agreed to a 15-day suspension, 5 days served (paid $1,595.19 fine in lieu of suspension), with 10 days held in abeyance for 1 year for violating C.R.S. 44 -3-901(1)(b)(I) of the Colorado Liquor Code – Sales/Service to Minors Prohibited. Associate Municipal Judge Nieto approved the findings, conclusion and order, accepting the stipulation agreement as presented for Agave Underground, LLC, dba Agave Underground, 321 East Foothills Parkway. Show Cause Hearing for Café Mexicali, LLC, dba Café Mexicali, 2925 South College Avenue, Stipulation Agreement Seth Krammer and Joe Stieber, representatives for Café Mexicali, stated they had an opportunity to review the stipulation agreement and have agreed to the terms. Assistant City Attorney Coulehan reviewed the terms of the stipulation agreement, noting the licensee agreed to a 15-day suspension, 5 days served (paid $ 500 fine in lieu of suspension), with 10 days held in abeyance for 1 year for violating C.R.S. 44 -3-901(1)(b)(I) of the Colorado Liquor Code – Sales/Service to Minors Prohibited. Show Cause Hearing for Harjun, Inc., dba Star of India, 2900 Harvard Street, Suite B, Stipulation Agreement Lavi Jaura, representative for Harjun, Inc., stated she has had an opportunity to review the stipulation agreement and has agreed to the terms. Assistant City Attorney Coulehan reviewed the terms of the stipulation agreement, noting the licensee agreed to a 16-day suspension, 5 days served (paid $ 500 fine in lieu of suspension), with 11 days held in abeyance for 1 year for violating C.R.S. 44 -3-901(1)(b)(I) of the Colorado Liquor Code – Sales/Service to Minors Prohibited.
